I’m am SOOOOOO glad that warm weather is finally here and all the yummy foods that come with it. That being said I do still get tired of the same old grilled foods we usually eat day in and day out. It seems in the summer time we have three things to choose from, grilled steak, grilled hamburgers, or grilled hot dogs. I love them all but I do get tired of eating them constantly. I remembered a recipe my mother had tried on me over 20 years ago and went to searching for it. Once I had searched the internet for anything that looked remotely like the recipe my mother used i began my work. After a test run and rave reveiws from my family I set to making a triple batch for the freezer so I can slap them on the grill any time were in the mood for someting different. Here it is my version of the Mock Filet along with the method I use to freeze them. (I triple this recipe and have the Kichenaid mixer do all the mixing for me)
1 lb. ground beef
1 jar muchroom pieces
2 tbsp. stuffed olives, chopped
2 tbsp green pepper chopped
1/2 c. Parmesan cheese
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp onions, chopped
6 slices bacon.
Put all above ingredients (except the bacon) into the mixer and mix well.
Now shape them into patties. (I like them to be even so I use a scale.) Then wrap the bacon around each one and fasten it with a toothpick.
You can grill (bake or fry) them now or freeze them in baggies for future use. In our case we grilled a few for supper and I put the rest in the freezer for another time. ENJOY!!
